Aromas: Fruity and floral with hints of green apple, white flowers and elderberry.
Palate: Fruity and citrusy with elegant aromatic notes, a marked minerality and sapidity.
Pairing recommendations: Raw seafood, shellfish, fried fish and fresh cheeses.
Vinification: Soft pressed to preserve the fruity and floral taste. After an early harvest of about 15 days and a 50% soft pressing, this is followed by about three weeks of slow fermentation at a low temperature. Then frothy juice is put directly into the autoclave without leaving the wine on the lees, this is followed by cold bottling.
Ageing: Stainless steel.
