Aromas:Thanks to its long-term aging in bottle, it has distinct, intense aromas of sour jam and intriguing notes of cinnamon and dried figs. It is intense, well-structured and round in the mouth with good tannins. Pleasant fruity notes recall those felt on the nose.
Pairing recommendations: best drunk with pork chops, roasted or stewed horse meat, game, and with medium mature cheeses.
Vinification: traditional temperature-controlled fermentation of must in large
wooden vats for 30-45 days.
Degree of alcohol: about 14-15%
